Leftover Turkey and R-Controlled Vowels

My hubby bought a deep fryer last week.  I have been telling him, "NO WAY!" for years but he convinced me with two simple words...turkey fryer. I caved.  I like turkey anyway but I LOVE fried turkey even more. So on Sunday, a couple days after said turkey fryer arrived, we fried up an 11 pound turkey just to test it out. It worked great and we ended up with plenty leftover turkey. What do you do with leftover turkey?  My family usually made turkey sandwiches or turkey soup but I am going to show you something totally different!

Thai Turkey Pizza
recipe adapted from Budget Bytes

pizza dough (not pictured)

For the sauce:
1/4 cup peanut butter
1/4cup hoisin sauce
1/2 tsp. siracha
1 inch fresh, grated ginger
1/4 tsp of fresh garlic
1/4 cup hot water

For the toppings:
1 medium to large turkey breast (cooked and cubed)
1 - 1 1/2 cups of shredded mozzarella cheese
1 small green bell pepper, sliced
2 green onions, sliced

More toppings after pizza is cooked:
chopped parsley
chopped peanuts
Parmesan cheese
remaining peanut sauce (thin it out with more water)
sweet chili sauce (not pictured)

You can use whatever pizza dough recipe you would like.  The original recipe from Budget Bytes calls for naan bread but I chose to use this recipe to make a quick pizza dough from Sugar Dish Me.

Directions:
Preheat the oven to 500 degrees.
(if you have a pizza stone let
that preheat in the oven)
Make the dough.
Make the sauce.
 Roll out the dough.
Spread the sauce.
Put on the toppings.

Bake the pizza for 15 minutes.
Top with chopped peanuts, parsley, Parmesan cheese, remaining peanut sauce, and sweet chili sauce.

Cut and EAT!

Now isn't that something different for Thanksgiving leftovers?!

Turkey Taco Lettuce Wraps and a Question

Hey everyone!  I hope you are having a great week.  I can't believe how fast this week has gone!

Remember how I told you here that I have been cutting back on the carbs...like WAY back. My dear friends Kim and Chelsie (follow her at To Second Grade, With Love) taught me this low carb recipe about four months ago. I have made it probably once a week since!  My husband has a general dislike for lettuce and salads but he will devour this every time. And this recipe seriously takes only 20 minutes to make.  Gotta love that!

You are only seeing a half recipe in the above picture. It's just the two of us so we don't eat much...or we shouldn't that is!

Heat olive oil and cook ground turkey with onions. I like to use dehydrated onions...mostly to be sneaky because I love onion flavor but my other half hates biting into onions. If you love fresh onion, by all means, use it!
Make sure you keep chopping up the turkey as you cook it.

Sprinkle in taco seasoning and water.

Watch out for that steam!  Sometimes the taco seasoning just isn't enough flavor for me so I also like to add some oregano, garlic powder, and a touch a cumin. But go easy on the extra seasoning you just need a little bit to make the flavors pop.
Let that simmer for five minutes and then your almost ready to eat! So easy, right?

Get your recipe here!
I like to have lots of toppings on mine.  I have one warning for you...this meal is a messy one! Sometimes those lettuce leaves don't cooperate but if that's the case then get a fork and your taco becomes a salad but don't tell my husband :)

I have a question for you...how do you have your students "draw" a place value model?  I'll show you what I used to have mine do.

This is a sample from my comparing two digit numbers power point that I have been working on.  Right now I am trying to access clip art of base ten blocks that I am allowed to use in a power point.

You can see that I used to have my students just draw sticks to represent the tens and dots to represent the ones.  It took alot less time than them drawing a rod or trying to draw a cube. So back to my question...

How do you have your students "draw" a place value model?

My Truth Monday

My hubby and I made it through a fun bachelor/ bachlorette filled weekend. We are both a part of the wedding which is in less than two weeks and we are thrilled to see two of our best friends get married. My friend loved her wedding signs which made me so happy that I was able to help her.  Speaking of signs...I have been working on the one for my custom sign winner...here...and can't wait to show you all later this week!

I love linking up and finding things in common with other bloggers out there.

So today I found My Truth Mondays over at Sunny Days in Second Grade. It's perfect for Halloween!

The last one is kind of funny considering where we are now...our home is kind of secluded and we have a really big, tree covered backyard.  I totally forgot how dark it gets out here compared to the city of Tucson. I just make my husband or dog go with me and I only half way run back inside rather than a full on sprint.

My obsession with green chiles has continued and I found a Chile Rellenos Casserole recipe that you should definitely try! I have been able to try lots of new recipes.  There are tons out there that I wish I had known when I had been teaching.  It would have saved us so much money.  I was always so worn out that I didn't always put in the effort to cook but I've found recipes that take 30 minutes to make and I want to share them with you!

These are the ingredients I used and the directions and amounts can be found at Hello Homebody. My husband and I both agreed that this casserole would also be amazing with sausage!
Happy Monday!  Go and link up with Sunny Days!  Apple on!
