Dirt Cake

Every week I can expect my husband to be asking me what he should take to his work's weekly luncheon.  I love to cook for others and he knows this. So I couldn't say no to helping him find a Halloween themed food.  Let me tell you...when you search for Halloween themed food be prepared to set your eyes upon some weird things *shudder* I decided to make something that was more fun than scary and I thought that your kiddos in the classroom would love it too!

I halved the recipe since it was for a potluck where large amounts of food would be provided but you could go with the original recipe from allrecipes.com if you think you need more.  I also added peanut butter as a last minute thought so for those little ones with peanut allergies...no problem...just don't use it!

Dirt Cake

1 package of chocolate sandwhich cookies 

(I'm an Oreo snob...they are just better than any other brand!)

1/4 cup butter - softened

4 oz cream cheese - softened

1/4 cup confectioners sugar

3 TBLS of peanut butter

1 (3.5 oz) instant vanilla pudding mix

1 3/4 cups of milk

1 (8oz) container frozen whipped topping - thawed

1 package of gummy worms

    Pulverize the cookies in a food processor.  I just have to say that it hardly 

took any time at all in my Ninja. I LOVE my Ninja food 

processor/ blender.  {Thanks, Mom!}

Cream together butter, cream cheese, sugar, and peanut butter.

Mix the pudding mix, milk, and whipped topping in a separate bowl.

Fold together the two wet mixtures to form a creamy, pudding, peanut buttery yumminess! Now I apologize for the lack of pictures from this part on...

it was due to all the vital taste testing that needed to be done :)

Layer cookies on the bottom of the pan, 

then cream mixture, then more cookies, 

then more cream, then top with cookies.

Chill until ready to serve.

Top with gummy worms right before serving!

This recipe is so easy and would be so fun to serve in a classroom! I have to say that those gummy worms look pretty good...this picture was sent from my husband and he truly exceeded my expectations in gummy worm placement.

My Truth Monday

My hubby and I made it through a fun bachelor/ bachlorette filled weekend. We are both a part of the wedding which is in less than two weeks and we are thrilled to see two of our best friends get married. My friend loved her wedding signs which made me so happy that I was able to help her.  Speaking of signs...I have been working on the one for my custom sign winner...here...and can't wait to show you all later this week!

So today I found My Truth Mondays over at Sunny Days in Second Grade. It's perfect for Halloween!

The last one is kind of funny considering where we are now...our home is kind of secluded and we have a really big, tree covered backyard.  I totally forgot how dark it gets out here compared to the city of Tucson. I just make my husband or dog go with me and I only half way run back inside rather than a full on sprint.

My obsession with green chiles has continued and I found a Chile Rellenos Casserole recipe that you should definitely try! I have been able to try lots of new recipes.  There are tons out there that I wish I had known when I had been teaching.  It would have saved us so much money.  I was always so worn out that I didn't always put in the effort to cook but I've found recipes that take 30 minutes to make and I want to share them with you! 

These are the ingredients I used and the directions and amounts can be found at Hello Homebody. My husband and I both agreed that this casserole would also be amazing with sausage!

My best friend that I met my first year of teaching is getting married in November. I have been helping her by making different signs for her wedding. I am enjoying it so much!

  I've also been working on my "Comparing Numbers" power point.  I think it will take me a little while but I want to make it just right!

 Last Friday I told you how to make and can Apple Butter {here}. My aunt also taught me how to can green chili.  We were able to have our green chilies roasted by the friendly guys at a local stand. I have been using these green chilies daily!

Probably my favorite way to devour one is to stuff it with cheese and pan fry it. It is also amazing alongside a fried egg...think chili relleno. Yum!

When I was thinking about what to make for dinner the other night I knew I wanted to use some green chilies but I didn't really have a recipe on hand. So I threw some ingredients together and made soup and it ended up being pretty dang good!

Custom Sign Giveaway!

I love, love, love my QuicKutz silhouette cutter! It has been amazing to have for every project.  Lately I have been making classroom signs for my teacher friends. Now I want to make one for a lucky follower of this blog!

I have been getting super domestic and  have learned how to can apple butter. {Thanks to my aunt!}  Canning is so much easier than I ever though!  I always used to think it took days and days of work to can anything.  While it does take hours it is well worth it because sometimes in the dead of winter you just want the fresh taste of apples that you can't buy at the store!

The recipe is so easy you could just leave it and do whatever you want while it cooks away.  We filled my 6 quart crockpot to the top with cut, peeled and cored apples. My aunt has one of these....

...which makes me wonder why I don't and makes the cutting, peeling, coring process go very quickly! Then dump in 4 cups of sugar and 4 teaspoons of cinnamon. We turned the crockpot on high for four hours but you could turn it on any temperature you want!  Make sure you stir it every now and then. I was able to fill 12 half pint jars when it was all done cooking.  You have to give the cans a water bath to seal them up. Set the cans in a pot, fill with water to just above the top of the cans. When it starts to boil set the timer for twenty minutes.  After twenty minutes remove the jars...you will hear each of them pop as they begin to seal. (That part scared my cat nearly to death!) Let the jars sit for 24 hours...this allows them to seal properly and don't forget to tell your husband not to poke the jars and prevent them from sealing. *sigh*

Yummy goodness in a jar!  My aunt says they make great Christmas gifts but I'm pretty sure they won't make it to Christmas time!  I just want to eat this stuff with a spoon but it is amazing on toast!

Apple On is Back!

Hello!  I'm back!  It's been a while but I have been so busy getting adjusted to all the new in my life.  The hubster and I moved into our new home in early July and I am LOVING it. After spending all of our married life in rentals it is so different and fun to call something your own and be able to make it your own!

The last days of school with my class in May were awesome.  We had alot of moments that I will never forget and I shed alot of tears but felt like I left things just exactly as I wanted to.

Since May I have been trying to figure out what my new calling in life should be and what I should make of this blog but for now I have been getting my "classroom fix"  by helping out some of my favorite people...my dad and Chelsie from To Second Grade, With Love! She is new to the blogging world and is doing and AMAZING job! {Hi Chelsie! Give that baby boy of your a cuddle for me!}

Another thing that I've been doing is teaching Sunday school. It has definitely been a challenge for me but it is also a big blessing!  Here are some of the handouts I have made for my class of 13-14 year old kids (I know...absolutely terrifying coming from 6-7 year old kids).
